Ingredients

  • 200g pardina lentils
  • 1 large onion
  • 3 cloves of garlic
  • 1 large carrot
  • 1 Stick of celery
  • 2 tablespoons olive oil
  • 200g smoked cooking chorizo
  • 1 teaspoon paprika
  • 1 teaspoon cumin seeds
  • 2 cloves
  • Bay leaf
  • Teaspoon dried thyme
  • Teaspoon dried oregano
  • Half a glass of red wine
  • Salt and black pepper to taste
  • 1 litre cold water
  • Tablespoon chopped parsley leaves

Instructions

  1. In a large saucepan, heat the olive oil over medium heat
  2. Add the chopped onion, garlic, carrot, and celery. Cook until the vegetables are soft and translucent, about 5-7 minutes
  3. Add the diced chorizo, bay leaf, thyme, oregano, cloves and cumin and cook for an additional 2-3 minutes until it starts to brown
  4. Stir in the paprika for 1 minute, then add the red wine and season with salt and pepper. Cook for 4-5 minutes
  5. Add the lentils, cold water and chicken stock cube to the saucepan and bring to the boil
  6. Reduce heat to low, cover and simmer for 45 minutes,  stirring occasionally, until the lentils are tender
  7. Garnish with chopped parsley and serve
